Rice Paper Rolls 🍱

These are such an easy way to use up what’s in your fridge and create a delicious, nutritious meal.


I made these with some salmon, left over slaw mix from pulled pork we had during the week, cucumber and a line of kewpie mayo.


The whole thing took me 15 minutes and was delicious 👌🏻


Recipe: makes 6


Ingredients


  • 300g of salmon from @catalanoseafood (the best)

  • teriyaki sauce (you could use any sauce you like to marinate)

  • 250g slaw mix of your choice

  • 1 tablespoon of sesame seeds

  • 1 Lebanese cucumber

  • extra teriyaki sauce for dipping

  • 2 teaspoons of sesame oil

  • 6 Pandaroo rice papers from @woolworths_au and they did not tear once! 🙌🏻


Method


  1. Marinate the salmon in a tablespoon of teriyaki sauce and cook in a low to medium heat pan with a teaspoon of sesame oil to your liking and then set aside to cool

  2. Add another teaspoon of sesame oil to the pan and the slaw mix until vibrant in colour and softened and stir through a tablespoon of sesame seeds, set aside to cool

  3. Cut up the cucumber into strips

  4. Prepare the rice paper as per the packet instructions

  5. Equally distribute the salmon, cucumber and slaw between the 6 pieces of rice paper

  6. Voila! I find these pretty filling so this made two lunches for me
